Easy Shortbread Recipe In Cups

You’ve probably seen a pattern occurring with my recipes… I like them quick and easy… and usually when baking this is made even easier when the measurements are in cups! Keep reading to see my 3 ingredient easy shortbread recipe!

This shortbread recipe is super quick and easy. It’s great for getting the kids involved whether it’s from the beginning by measuring and mixing ingredients or just for the rolling and cutting stage. Either way, It’s a great activity to do with little ones and really good for developing gross motor skills and maths!

3 Ingredient Shortbread Recipe

What you need:

  • Large bowl
  • wooden spoon
  • rolling pin
  • Baking tray
  • Greaseproof paper
  • Cling film
  • cookie cutters
  • 2 cups of plain flour
  • 1/2 cup sugar
  • 1 cup of room temperature butter
  • Chocolate chips (Optional)

What to do:

  • In a large bowl mix together the butter and sugar until it’s nice and fluffy.
  • then add in your flour and choc chips if you’re having them.
  • If the mixture isn’t combining into a dough add a tiny bit of butter to bring it together.
  • Cover with cling film and cool in the fridge for 15 minutes.
  • Preheat oven at 150 fan assisted.
  • Line a baking tray with greaseproof paper.

  • Remove from the fridge and roll/cut. Don’t roll them too thin. We do ours about 1-1.5cm thick.
  • Place your shortbread shapes onto the prepared baking tray and pop into the oven for 15 minutes or until slightly brown. Beware not to over cook them. *The first time I did this I didn’t think they’d browned enough and were slightly soft to touch so I put them back in for another 5-10 minutes… They then ended up rock solid and burnt at the bottom.
  • They might not appear baked but once they cool they’ll be perfectly light and crumbly. You can also sprinkle sugar on top to give it that shop bought professional look.
  • Allow to cool and serve with a nice cup of tea… or cold milk if you’re sharing the shortbread with the kids!
